Fire
Split oak goes in the firebox before we open. Everything on the menu with a grill mark got it over those coals, not a gas flat-top.
Wood-fire grill & taqueria · 418 Foundry St, Marrowick
Oak fire, a steel grate, corn tortillas pressed at the counter and six salsas in squeeze bottles. Order at the window, grab a number, and we shout it when your tray is up.
What happens here
Split oak goes in the firebox before we open. Everything on the menu with a grill mark got it over those coals, not a gas flat-top.
Masa gets pressed and slapped on the comal when you order. Two tortillas under every taco, so nothing falls through.
Six squeeze bottles at the bar, from a mild tomatillo verde to a smoky macha that bites back. Help yourself, as much as you want.
